A quick and easy appetizer featuring spicy jalapeños stuffed with a creamy cheese blend and wrapped in crispy bacon. Perfect for gatherings and casual snacking.

  • 10 medium-sized fresh jalapeño peppers
  • 8 oz softened cream cheese
  • 1 cup shredded sharp cheddar cheese
  • 10 thin-cut bacon strips
  • ½ tsp garlic powder
  • ¼ tsp onion powder (optional)
  • Pinch of smoked paprika (optional)
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or place a wire rack on top.
  2. Wearing gloves, slice each jalapeño in half lengthwise and carefully scrape out the seeds and membranes.
  3. In a mixing bowl, combine softened cream cheese, shredded sharp cheddar, garlic powder, onion powder (if using), smoked paprika (if using), salt, and pepper. Mix until smooth and creamy.
  4. Fill each jalapeño half generously with the cheese mixture.
  5. Cut bacon strips in half crosswise. Wrap each stuffed jalapeño half with a bacon piece and secure with a toothpick if needed.
  6. Arrange the poppers bacon-side up on the wire rack or parchment-lined baking sheet, leaving space between them.
  7. Bake for 20-25 minutes or until bacon is crispy and cheese is bubbly. Optionally broil for 2-3 minutes at the end to crisp bacon further, watching carefully to avoid burning.
  8. Let cool for 5 minutes before serving.

Notes

Wear gloves when handling jalapeños to avoid irritation. Use a wire rack to allow bacon fat to drip away for crispier bacon. Partially cook thicker bacon strips before wrapping to ensure crispiness. Broil at the end for extra crunch but watch closely to prevent burning. Let poppers rest 5 minutes before serving to avoid burning your mouth.
