Ingredients

Scale
  • 2 cups Bisquick baking mix (classic or gluten-free)
  • 1 pound uncooked breakfast sausage (pork or turkey)
  • 2 cups shredded sharp cheddar cheese (preferably extra sharp, freshly grated)
  • 1/4 cup milk (whole or 2%)
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon onion powder (optional)
  • Pinch of black pepper (optional)
  • Chopped parsley or chives (optional, for garnish)
  • Ranch dressing (for dipping, optional)
  • Honey mustard (for dipping, optional)
  • Spicy sriracha mayo (for dipping, optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, combine Bisquick, uncooked sausage, shredded cheddar, and milk. Add optional seasonings if desired.
  3. Mix with clean hands until well combined. If the mixture is too dry, add another tablespoon of milk; if too wet, sprinkle in more Bisquick.
  4. Use a small cookie scoop or tablespoon to portion out the mixture. Roll into 1-inch balls and place about 1 inch apart on the baking sheet.
  5. Bake for 22–25 minutes, rotating the pan halfway through, until golden brown and crispy. If needed, bake an additional 2–3 minutes for extra crunch.
  6. Let sausage balls rest on the baking sheet for 5 minutes, then transfer to a cooling rack.
  7. Serve warm with your favorite dipping sauces.

Notes

For extra crunch, add 2 tablespoons more Bisquick. Use freshly shredded cheddar for best texture. Chill balls before baking if mixture is loose. Air fryer option: bake at 350°F for 12–15 minutes. Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 2 months. Reheat in oven for best crispiness.
