A quick and easy side dish featuring caramelized Brussels sprouts and crispy bacon, perfect for cozy dinners, holiday gatherings, or potlucks. This flavorful recipe delivers a perfect balance of savory, smoky, and slightly sweet tastes.

Ingredients

Scale
  • 1 pound Brussels sprouts, trimmed and halved
  • 6 slices thick-cut bacon, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika (optional)
  • Salt to taste
  • Freshly ground black pepper to taste
  • Pinch of red pepper flakes (optional)
  • Juice of half a lemon

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse and trim the ends of Brussels sprouts, then slice each sprout in half lengthwise. Pat dry thoroughly with a kitchen towel.
  3. Cut bacon into 1-inch pieces. Optionally, partially cook bacon in a skillet for extra crispiness.
  4. In a large mixing bowl, combine Brussels sprouts, bacon pieces, olive oil, garlic powder, paprika (if using), salt, and pepper. Toss until evenly coated.
  5. Arrange sprouts and bacon in a single layer on a rimmed baking sheet, cut side down for the sprouts. Use two pans if needed to avoid overcrowding.
  6. Roast for 20-25 minutes, flipping halfway through (around 12 minutes) using tongs or a spatula, until sprouts have deep golden-brown edges and bacon is crispy.
  7. Remove from oven and immediately squeeze fresh lemon juice over the top. Toss gently to combine and serve hot.

Notes

Dry Brussels sprouts thoroughly before roasting to ensure crispiness. Avoid overcrowding the pan to prevent steaming. If bacon browns too fast, lower oven temperature or stir more often. Reheat leftovers in a skillet or oven to maintain crispness; avoid microwaving.
