  • 1 lb ground beef (85% lean recommended)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika (optional)
  • Salt and black pepper to taste
  • 6 large flour tortillas (8-inch diameter)
  • 2 cups shredded sharp cheddar cheese (or mix of cheddar and Monterey Jack)
  • 2 tbsp unsalted butter
  • 2 medium ripe tomatoes, diced
  • 1/4 cup finely chopped red onion
  • 1 jalapeño, seeded and finely chopped (optional)
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt to taste

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spatula until browned, about 6-8 minutes. Drain excess fat if needed.
  2. Add chopped onion and garlic to the beef. Cook until onion softens, about 3 minutes. Stir in chili powder, cumin, smoked paprika, salt, and pepper. Cook for another 2 minutes. Remove from heat and set aside.
  3. In a mixing bowl, combine diced tomatoes, red onion, jalapeño, cilantro, lime juice, and salt. Stir gently and refrigerate until ready to serve.
  4. Lay out a tortilla on a clean surface. Sprinkle about 1/3 cup shredded cheese evenly over half the tortilla. Spoon about 1/4 cup of the beef mixture over the cheese, then top with another 1/4 cup of cheese.
  5. Fold the tortilla over itself to create a half-moon shape. Press gently to seal.
  6. Heat 1 tablespoon butter in a large skillet over medium heat. Place the quesadilla in the pan and cook for 3-4 minutes on each side until golden brown and crispy and cheese is melted inside. Adjust heat as needed.
  7. Transfer cooked quesadilla to a cutting board and let rest for a minute. Slice into 6-8 bite-sized wedges.
  8. Repeat assembly and cooking for remaining tortillas, adding more butter as needed.
  9. Serve warm with fresh salsa on the side.

Notes

Use medium heat to avoid burning tortillas before cheese melts. Freshly shredded cheese melts better than pre-shredded. Let quesadillas rest before slicing to prevent cheese from oozing. For gluten-free, swap flour tortillas for corn or gluten-free wraps. For dairy-free, use vegan cheese and olive oil instead of butter.
