A quick and easy pull-apart loaf loaded with garlic butter, mozzarella, and cheddar cheese, baked to crispy, gooey perfection. Perfect for snacks, gatherings, or comfort food cravings.

  • 1 large round sourdough or artisan bread loaf (about 12 oz / 340 g)
  • 1/2 cup (115 g) unsalted butter, softened
  • 45 cloves garlic, finely minced
  • 1 1/2 cups (170 g) shredded mozzarella cheese
  • 1/2 cup (50 g) shredded sharp cheddar cheese
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon dried Italian seasoning (optional)
  • Salt and black pepper, to taste
  • Red pepper flakes (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the softened butter with minced garlic, chopped parsley, dried Italian seasoning, a pinch of salt, and black pepper. Mix until evenly blended and fragrant, about 2 minutes. Stir in red pepper flakes if desired.
  3. Using a sharp serrated knife, make vertical cuts about 1 inch apart, slicing down to but not through the bottom crust. Then make horizontal cuts to create a grid pattern of roughly 1-inch cubes, keeping the loaf whole.
  4. Gently spread the garlic butter mixture into every cut and crevice, making sure to get the butter down to the bottom crust without tearing the bread.
  5. Stuff the shredded mozzarella and cheddar cheese into the cuts, filling each gap generously.
  6. Place the stuffed loaf on a baking sheet lined with parchment paper and wrap loosely with aluminum foil.
  7. Bake for about 15 minutes, then remove the foil and bake for another 10–12 minutes until the cheese is bubbly and the top is golden and crispy.
  8. Let the loaf rest for 5 minutes before serving to allow the cheese to set slightly.

Notes

Use softened butter for easy spreading. Take your time slicing the bread to avoid crumbling. Wrap with foil during baking to keep moisture in, then remove foil to crisp the top. If loaf seems dry after baking, brush with melted butter. Watch oven closely after removing foil to avoid burning.
