  • 16 ounces (450g) cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs, room temperature
  • ½ cup sour cream or plain Greek yogurt
  • 1 teaspoon vanilla extract
  • ¼ cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a large bowl, whisk together flour, ½ cup sugar, baking powder, salt, and ½ teaspoon cinnamon. Add cold cubed butter and blend until mixture resembles coarse crumbs. Stir in egg and vanilla extract until crumbly dough forms.
  3. Press about two-thirds of the dough evenly into the prepared pan to form the base. Bake for 12-15 minutes until slightly golden.
  4. While crust bakes, beat softened cream cheese and ¾ cup sugar on medium speed until smooth. Add eggs one at a time, mixing well after each. Mix in sour cream and vanilla extract until combined.
  5. Pour cheesecake filling over warm crust and spread evenly. Crumble remaining churro dough over the top.
  6. Mix ¼ cup sugar and 1 tablespoon cinnamon for topping. Drizzle melted butter over crumble, then sprinkle cinnamon sugar evenly on top.
  7. Bake for 35-40 minutes until edges are set but center slightly jiggles. Let cool completely on a wire rack.
  8. Refrigerate for at least 4 hours or overnight to set.
  9. Use parchment overhang to lift bars out and cut into squares. Serve chilled or at room temperature.
