A quick and easy recipe to transform croissants into a buttery, flaky, and crispy cereal perfect for breakfast or snacks. This nostalgic treat delivers a satisfying crunch with melt-in-your-mouth layers.

Ingredients

Scale
  • 4 large croissants, day-old or fresh (day-old works best for crispiness)
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon (optional)
  • Pinch of sea salt
  • 1 teaspoon vanilla extract (optional)
  • 1/4 cup chopped nuts (optional)
  • 1/4 cup dried fruit like cranberries or raisins (optional)

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Cut the croissants into bite-sized pieces about 1/2 to 3/4 inch (1.5-2 cm) using a sharp knife or kitchen scissors, being gentle to preserve flaky layers.
  3. Melt the butter in a microwave-safe bowl or on the stovetop until fully liquid but not browned (about 30 seconds in the microwave). Add vanilla extract if using.
  4. In a mixing bowl, combine the melted butter, granulated sugar, cinnamon (if using), and a pinch of sea salt. Stir well.
  5. Toss the croissant pieces in the butter mixture until evenly coated.
  6. Spread the coated croissant pieces in a single layer on the prepared baking sheet, avoiding overcrowding.
  7. Bake for 20-25 minutes, stirring gently every 8 minutes to ensure even color and crunch.
  8. Remove from oven and transfer croissant cereal to a cooling rack to crisp further.
  9. Once cooled, store in an airtight container at room temperature for up to 3 days.

Notes

Use day-old croissants for best crispiness. Stir every 8 minutes during baking to prevent burning and ensure even crisping. Cool completely on a rack before storing to maintain crunch. Optional add-ins like nuts or dried fruit can be added during the last 5 minutes of baking or after cooling. For dairy-free, use plant-based butter and dairy-free croissants. For gluten-free, use gluten-free croissants or puff pastry.
