  • Button or cremini mushrooms
  • 1 cup (120g) all-purpose flour
  • 1/4 cup (30g) cornstarch
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 large eggs
  • 2 tbsp milk
  • 1 cup (50g) panko breadcrumbs
  • Vegetable or canola oil for frying

Instructions

  1. Wash the mushrooms thoroughly and pat them dry with a kitchen towel. Slice larger mushrooms in half for even cooking.
  2. In one bowl, combine flour, cornstarch, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  3. In another bowl, whisk together eggs and milk.
  4. Pour panko breadcrumbs into a third bowl and optionally add a pinch of salt and paprika.
  5. Dredge each mushroom in the flour mixture, shake off excess, dip into the egg mixture, and roll in panko breadcrumbs to coat completely.
  6. Heat oil in a frying pan to 350°F (175°C).
  7. Fry the coated mushrooms in small batches for 2-3 minutes on each side until golden brown.
  8. Transfer fried mushrooms to a wire rack or paper towel-lined plate to drain excess oil.
  9. Serve immediately with your favorite dipping sauce.

Ensure mushrooms are dry before coating to prevent soggy breading. Fry in small batches to maintain oil temperature. Double-coat for extra crunch.
