  • 4 cloves garlic, minced
  • ½ cup Parmesan cheese (50g), finely grated
  • 3 tablespoons unsalted butter, melted

  • 1 teaspoon dried Italian herbs (oregano, basil, thyme blend)
  • Salt and freshly ground black pepper, to taste
  • For the Blue Cheese Dip:
  • ½ cup blue cheese crumbles (about 75g)
  • ½ cup sour cream (120ml), full-fat
  • ¼ cup mayonnaise (60ml)
  • 1 teaspoon fresh lemon juice
  • ¼ teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top.
  2. Dry the chicken wings thoroughly with paper towels to ensure crispiness.
  3. In a large bowl, combine melted butter, olive oil, minced garlic, dried Italian herbs, salt, and pepper.
  4. Toss the wings in the butter mixture until fully coated.
  5. Arrange the wings in a single layer on the wire rack, skin side up, ensuring they are not touching.
  6. Bake for 35 minutes, flipping halfway through (about 17 minutes per side).
  7. After flipping, sprinkle the grated Parmesan evenly over the wings so it sticks and melts.
  8. Switch the oven to broil on high and broil the wings for 2-3 minutes until the Parmesan crisps and wings turn golden. Watch carefully to avoid burning.
  9. While wings cook, prepare the blue cheese dip by mixing blue cheese crumbles, sour cream, mayonnaise, lemon juice, garlic powder, salt, and pepper until creamy but still chunky.
  10. Remove wings from the oven and let rest for 5 minutes to redistribute juices and keep skin crisp.
  11. Serve wings hot with a generous bowl of blue cheese dip on the side.
