These crispy homemade bagel bites feature warm, toasty mini bagels topped with melted mozzarella cheese and zesty tomato sauce, perfect for quick snacks or gatherings.

Ingredients

Scale
  • Mini bagels, halved horizontally (plain or everything bagels preferred)
  • Olive oil, for brushing
  • 1/2 cup tomato sauce (homemade or store-bought with herbs)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup pepperoni slices (optional)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • Red pepper flakes (optional)
  • Fresh basil or parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and allow it to reach the temperature.
  2. In a small bowl, mix 1/2 cup tomato sauce with Italian seasoning, garlic powder, and optional red pepper flakes.
  3. Slice the mini bagels in half horizontally and arrange cut side up on a parchment-lined baking sheet.
  4. Brush each bagel half lightly with olive oil using a pastry brush.
  5. Spread a spoonful of the seasoned tomato sauce over each bagel half, then top with shredded mozzarella cheese and optional pepperoni slices.
  6. Bake for 10-12 minutes until cheese is bubbly and edges are golden and crispy.
  7. Remove from oven and let cool for a couple of minutes to set the cheese.
  8. Garnish with fresh basil or parsley before serving.

Notes

Brush bagel halves with olive oil to lock in crunch without drying out. Use fresh shredded mozzarella for best melt. Spread sauce thinly to avoid sogginess. Rotate baking sheet halfway for even crispiness. Fresh or thawed bagels work best; avoid frozen bagels for crispiness. Reheat leftovers in oven at 350°F for 5-7 minutes; avoid microwaving.
