A quick and easy homemade honeycomb candy recipe inspired by Squid Game, delivering a nostalgic, crispy, and sweet caramel treat perfect for parties and gifting.

Ingredients

Scale
  • 1 cup (200g) granulated sugar
  • 2 tablespoons (30ml) honey
  • 1/4 cup (60ml) water
  • 1 teaspoon baking soda
  • Vegetable oil or non-stick spray (for greasing)
  • Optional: pinch of sea salt flakes
  • Optional: 1/2 teaspoon vanilla extract
  • Optional: dark chocolate (for drizzling or dipping)

Instructions

  1. Prepare your workspace by greasing a baking sheet or lining it with a silicone mat. Have baking soda measured and ready.
  2. In a heavy-bottomed saucepan, combine sugar, honey, and water. Stir gently over medium heat until sugar dissolves completely, forming a clear syrup.
  3. Allow the syrup to boil without stirring for 8-10 minutes, swirling occasionally, until it turns a rich amber color (about 300°F or 150°C).
  4. Remove from heat and quickly stir in baking soda; the mixture will foam and lighten in color. Stir gently but thoroughly.
  5. Pour the foamy mixture onto the prepared baking sheet or silicone mat. Let it naturally puff and set without spreading.
  6. Let the candy cool completely at room temperature for at least 30 minutes until it snaps crisply when broken.
  7. Break the cooled honeycomb into bite-sized pieces and store in an airtight container.

Notes

Work quickly when adding baking soda and pouring the mixture as it sets fast. Use fresh baking soda for best airy texture. Avoid stirring during boiling to prevent graininess. Store candy in an airtight container at room temperature away from humidity. Refrigeration is not recommended as it causes stickiness. For vegan version, substitute honey with maple syrup or agave nectar. Optional flavor variations include adding cinnamon, chili powder, peppermint extract, or dipping in chocolate.
