  • 2 lbs russet potatoes, scrubbed and diced (leave skins on)
  • 2 tbsp cornstarch
  • 2 tbsp olive oil (or avocado oil)
  • 1 packet (1 oz) ranch seasoning mix
  • 3 garlic cloves, minced
  • 1 tsp smoked paprika (optional)
  • 1/2 tsp black pepper
  • 1/2 tsp salt (adjust to taste)
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled (about 4 slices)
  • 1/4 cup chopped fresh chives (or green onions)
  • 1/4 cup sour cream, for serving
  • Red pepper flakes (optional)
  • Fresh parsley, chopped (optional)
  • Avocado slices (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. Wash and dice potatoes into 1/2-inch cubes, leaving skins on. Pat dry with a clean towel.
  3. In a large bowl, toss potatoes with olive oil, cornstarch, ranch seasoning, minced garlic, smoked paprika, salt, and pepper until evenly coated.
  4. Spread potatoes in a single layer on the baking sheet. Bake for 20 minutes, then flip with a spatula. Bake another 10-15 minutes until deeply golden and crispy.
  5. Sprinkle shredded cheddar cheese over hot potatoes. Return to oven for 2-3 minutes until cheese is melted.
  6. Remove from oven and top immediately with crumbled bacon and chopped chives.
  7. Let cool for 2-3 minutes. Serve with dollops of sour cream and a sprinkle of parsley or red pepper flakes. Enjoy!

Notes

For extra crispiness, pat potatoes dry before seasoning and don’t crowd the pan. Use parchment paper to prevent sticking. You can prep potatoes ahead and bake just before serving.
