  • 1 tablespoon olive oil (extra virgin preferred)
  • 2 tablespoons grated Parmesan cheese
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon dried Italian herbs (optional)

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook 1½ cups (about 150g) of small pasta shapes like rotini or penne until al dente, about 7-8 minutes. Drain and rinse under cold water to stop cooking. Pat dry with paper towels to remove excess moisture.
  2. Season the pasta: In a mixing bowl, toss the cooled pasta with 1 tablespoon of olive oil, 2 tablespoons grated Parmesan, ½ teaspoon garlic powder, ¼ teaspoon smoked paprika, ½ teaspoon Italian herbs (optional), ½ teaspoon salt, and ¼ teaspoon freshly ground black pepper. Make sure every piece is coated evenly.
  3. Preheat the air fryer: Set your air fryer to 400°F (200°C) and let it heat up for about 3 minutes.
  4. Arrange pasta in the basket: Spread the pasta in a single layer in the air fryer basket. Avoid piling them up or they won’t crisp properly. You might need to cook in two batches depending on your air fryer size.
  5. Air fry the pasta chips: Cook for 8-10 minutes, shaking the basket or tossing the chips gently halfway through to ensure even crisping. Keep an eye on them around the 8-minute mark so they don’t burn. They should be golden brown and crunchy to the bite.
  6. Cool and serve: Transfer the crispy pasta chips to a cooling rack or a plate lined with paper towels to drain any excess oil. Let them cool for 5 minutes to firm up.

Notes

Dry the pasta thoroughly before seasoning and cooking to ensure crispiness. Avoid overcrowding the air fryer basket to prevent soggy chips. Shake or toss halfway through cooking for even browning. For extra cheesy chips, sprinkle more Parmesan immediately after air frying while chips are hot. Can be baked in the oven at 400°F for 12-15 minutes as an alternative.
