Flavor-packed tacos combining crispy smash burger patties with melted cheddar cheese and toasted tortillas, perfect for quick weeknight dinners or gatherings.

  • 1 pound (450 g) ground beef (80/20 blend)
  • Salt and pepper, to taste
  • 4 ounces (115 g) shredded cheddar cheese
  • 810 small flour tortillas (can substitute corn tortillas for gluten-free)
  • 2 tablespoons vegetable oil or butter
  • Thinly sliced dill pickles
  • 1/4 cup (60 ml) mayonnaise (regular or chipotle mayo)
  • 2 tablespoons ketchup
  • 2 tablespoons mustard
  • Finely diced onion (optional)

Instructions

  1. Place ground beef in a mixing bowl and season generously with salt and pepper. Gently mix with hands just to combine.
  2. Heat a cast iron skillet over medium-high heat until smoking hot. Add 1 tablespoon vegetable oil or butter to coat the pan.
  3. Divide beef into 4 equal portions (about 4 ounces or 115 g each). Roll loosely into balls.
  4. Place each ball onto the hot skillet and smash down firmly using a spatula or burger press to about 1/4-inch (6 mm) thickness, creating irregular crispy edges.
  5. Cook patties without moving for 2-3 minutes until edges are deeply browned and crispy. Flip carefully, add shredded cheddar cheese on top, and cook another 1-2 minutes until cheese melts and patties are cooked through.
  6. While patties cook, heat another skillet or clean the same one. Add a little butter or oil and fry each tortilla for about 30 seconds per side until golden and crisp but still pliable. Drain on paper towels.
  7. Spread a thin layer of mayonnaise on each tortilla. Place one crispy smash burger patty on top. Drizzle ketchup and mustard, add diced onions and pickles as desired.
  8. Serve immediately while hot and fresh.

Notes

Use a very hot pan and a thin layer of oil to prevent patties from sticking. Smash patties quickly and firmly but avoid pressing repeatedly to keep juiciness. Fry tortillas until golden but still pliable to avoid cracking. Store patties and tortillas separately if saving leftovers and reheat gently.
