  • 4 slices cheddar cheese
  • 1 cup shredded iceberg lettuce
  • 1 large tomato, thinly sliced
  • ¼ cup thinly sliced red onion (optional)
  • Zesty Special Sauce:
  • ½ cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon pickle relish
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • A few dashes hot sauce (optional)

Instructions

  1. Make the Zesty Special Sauce: In a mixing bowl, combine mayonnaise, ketchup, Dijon mustard, pickle relish, garlic powder, smoked paprika, and hot sauce if using. Stir until smooth, taste and adjust seasoning. Cover and refrigerate.
  2. Prepare the Veggies: Thinly slice tomato and red onion. Shred iceberg lettuce. Set aside.
  3. Form the Beef Balls: Divide ground beef into 4 equal portions (about 4 ounces each). Gently roll into loose balls without overworking.
  4. Heat the Skillet: Place cast iron skillet over medium-high heat and add oil. Heat until shimmering.
  5. Smash and Cook Patties: Place one beef ball in skillet, press down firmly with metal spatula to about ¼ inch thickness. Hold 10 seconds to set crust. Cook 2-3 minutes without moving. Flip, add cheddar slice, cook 1-2 minutes until cheese melts and patty is cooked through. Repeat with remaining balls, adding oil as needed.
  6. Warm the Tortillas: Heat tortillas briefly in dry pan or microwave until pliable.
  7. Assemble the Wraps: Spread zesty special sauce on each tortilla. Place cheesy patty in center, top with lettuce, tomato, and onion. Fold sides and roll tightly.
