  • 4 ounces cooked pork or chicken sausage, crumbled or sliced (spicy pork sausage recommended)
  • ½ cup pizza or marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons softened butter
  • 2 tablespoons finely chopped onion (optional)
  • 2 tablespoons finely diced bell pepper (optional)
  • 1 small clove garlic, minced
  • ½ teaspoon dried oregano
  • Pinch of red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh basil or parsley leaves for garnish (optional)

Instructions

  1. Preheat your oven broiler to high and position the rack about 6 inches from the heat source (about 5 minutes).
  2. Heat 1 tablespoon butter in a skillet over medium heat. Add crumbled sausage and cook until browned, about 5-7 minutes.
  3. Add chopped onion, bell pepper, and minced garlic; sauté until softened, about 3 minutes. Season with salt, pepper, oregano, and red pepper flakes if using. Remove from heat.
  4. Spread remaining 1 tablespoon softened butter on one side of each bread slice. Place bread butter-side down on a skillet or toaster and toast lightly until golden and crisp, about 2 minutes.
  5. Flip toasted bread so buttered side is down on a baking sheet. Spread about 2 tablespoons tomato sauce evenly on each slice.
  6. Spoon sausage and veggie mixture evenly over the sauce. Sprinkle ¼ cup shredded mozzarella over each slice.
  7. Place baking sheet under broiler and broil for 3-5 minutes until cheese is bubbly and golden brown with crispy edges. Watch closely to avoid burning.
  8. Remove from oven, garnish with fresh basil or parsley if desired, and let cool for a minute before slicing and serving.
