  • 2 boneless, skinless chicken breasts
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth (low-sodium preferred)
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • Optional toppings: croutons, shredded mozzarella, fresh basil

Instructions

  1. In the crock pot, add the chicken breasts, crushed tomatoes, chicken broth, diced onion, garlic, Italian seasoning, salt, and pepper.
  2. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is tender and fully cooked.
  3. Once the chicken is done, use tongs to remove it from the crock pot. Shred the chicken with two forks and set aside.
  4. In a small mixing bowl, whisk together the heavy cream and grated Parmesan cheese until well combined.
  5. Pour the cream mixture into the crock pot and stir to combine. Add the shredded chicken back to the soup and mix well.
  6. Cover and cook on low for an additional 20-30 minutes to allow the flavors to meld and the soup to thicken slightly.
  7. Before serving, taste and adjust seasoning with additional salt and pepper if needed.
  8. Ladle the soup into bowls and top with your favorite garnishes, such as croutons, shredded mozzarella, or fresh basil.
