A luxurious and easy-to-make recipe combining chocolate-covered strawberries with sparkling wine and fresh orange juice, perfect for elegant celebrations and festive gatherings.

Ingredients

Scale
  • 1 pound (450 grams) fresh strawberries, washed and dried thoroughly
  • 8 ounces (225 grams) high-quality semi-sweet chocolate, chopped or chocolate chips
  • 2 tablespoons (30 ml) heavy cream or coconut cream (optional but recommended)
  • 1 bottle (750 ml) sparkling wine or champagne, well-chilled (dry prosecco or brut champagne recommended)
  • 1 cup (240 ml) fresh orange juice, preferably freshly squeezed
  • Optional garnishes: crushed pistachios, edible gold flakes, mini chocolate shavings

Instructions

  1. Rinse 1 pound (450 grams) of fresh strawberries under cold water. Gently pat them completely dry with a clean kitchen towel and set aside on a parchment-lined baking sheet. (10 minutes)
  2. In a double boiler or heatproof bowl over simmering water, combine 8 ounces (225 grams) of semi-sweet chocolate and 2 tablespoons (30 ml) of heavy cream. Stir gently until smooth and glossy, avoiding water contact. (5-7 minutes)
  3. Holding a strawberry by the stem, dip it into the melted chocolate, swirling to coat evenly. Let excess drip off before placing it back on the parchment paper. Optionally drizzle contrasting white chocolate over the dipped berries once set. (15 minutes)
  4. Place the tray of dipped strawberries in the fridge for 30 minutes or until the chocolate hardens completely. (30 minutes)
  5. In a pitcher, combine 1 cup (240 ml) of fresh orange juice with the chilled bottle of sparkling wine (750 ml). Stir gently to blend without losing fizz. (5 minutes)
  6. Pour the mimosa mixture into champagne flutes, then garnish each glass by skewering one or two chocolate-covered strawberries on the rim or dropping them inside the glass. Optionally sprinkle crushed pistachios or edible gold flakes on the strawberries. (5 minutes)

Notes

Ensure strawberries are completely dry before dipping to prevent chocolate from seizing. Use gentle heat when melting chocolate to avoid burning. Chill dipped strawberries for at least 30 minutes to harden chocolate. For dairy-free or vegan versions, substitute heavy cream with coconut cream and use dairy-free dark chocolate and sparkling cider instead of wine. You can prepare chocolate-covered strawberries up to 24 hours in advance and store refrigerated in an airtight container.
