  • 1/2 cup (120 ml) heavy cream
  • 1 tablespoon unsalted butter, softened
  • 1 teaspoon vanilla extract (optional)
  • Pinch of salt
  • 1 pint fresh strawberries, hulled
  • 1 pint fresh blueberries
  • 1 pint fresh raspberries
  • 1 pound store-bought or homemade pound cake, cut into 1-inch cubes

Instructions

  1. Rinse and dry the fresh berries carefully (about 5 minutes). Hull the strawberries and cut the pound cake into 1-inch cubes. Arrange them attractively on a serving platter or separate bowls.
  2. Pour 1/2 cup (120 ml) heavy cream into a small saucepan and warm it over medium heat until it just starts to simmer around the edges (about 3-4 minutes). Do not let it boil.
  3. Place 8 oz (225 g) of chocolate chips in a medium heatproof bowl. Pour the hot cream over the chocolate and let it sit undisturbed for 2 minutes to soften the chips.
  4. Using a spatula, gently stir the chocolate and cream mixture until completely smooth and glossy. Add 1 tablespoon softened unsalted butter, 1 teaspoon vanilla extract (if using), and a pinch of salt. Stir again until well incorporated (about 2-3 minutes).
  5. If using a fondue pot or slow cooker, pour the chocolate into it to keep warm. Otherwise, leave it in the bowl and serve immediately, stirring occasionally to maintain smoothness.
  6. Serve warm chocolate fondue with fresh berries and pound cake cubes. Use fondue forks or skewers for dipping.

Notes

Use good-quality chocolate for smooth melting. Heat cream just to a gentle simmer to avoid scorching chocolate. Stir gently and steadily to achieve silky texture. Keep fondue warm but not hot to prevent burning. If chocolate thickens, rewarm gently with a splash of cream. For dairy-free, use canned coconut milk and dairy-free chocolate. For gluten-free, use gluten-free pound cake or angel food cake.
