  • 1/2 cup (4 oz / 115 g) unsalted butter, cut into pieces
  • 3/4 cup (2.6 oz / 75 g) unsweetened cocoa powder
  • 2 cups (8.8 oz / 250 g) all-purpose flour
  • 2 teaspoons baking soda
  • 1 3/4 cups (7.75 oz / 350 g) granulated sugar
  • 2 large eggs, room temperature
  • 1/2 cup (4.2 oz / 120 g) sour cream
  • 1 teaspoon vanilla extract
  • 8 oz (225 g) cream cheese, softened
  • 1/4 cup (2 oz / 55 g) unsalted butter, softened
  • 3 cups (10.5 oz / 360 g) powdered sugar, sifted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line two 9-inch cake pans with parchment paper.
  2. In a small saucepan over medium heat, combine Guinness stout and butter. Heat until butter melts, then remove from heat. Whisk in cocoa powder until smooth (about 5 minutes).
  3. In a large bowl, sift together flour and baking soda. Add sugar and stir to combine.
  4. In a separate bowl, whisk eggs, sour cream, and vanilla extract until smooth.
  5. Slowly pour the Guinness mixture into the dry ingredients, stirring gently to combine. Fold in the wet egg mixture until just incorporated. Do not overmix.
  6. Divide batter evenly between prepared pans. Tap pans gently on counter to release air bubbles.
  7. Bake for 45-50 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. Start checking at 40 minutes.
  8. Let cakes cool in pans for 15 minutes, then turn out onto cooling racks to cool completely.
  9. Beat cream cheese and softened butter together with an electric mixer until smooth and creamy (2-3 minutes). Gradually add powdered sugar and vanilla, beating until light and fluffy.
  10. Place one cake layer on serving plate. Spread a generous layer of frosting on top. Add second cake layer and cover entire cake with remaining frosting. Smooth or create swirls as desired.
  11. Refrigerate cake for at least 1 hour before serving to let flavors meld and frosting set.

Use room temperature eggs and sour cream for smooth batter. Fold batter gently to avoid deflating. Chill frosting slightly if too runny before spreading.
