  • 3/4 cup chocolate chips (semi-sweet or milk chocolate)
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 egg, beaten (for egg wash)
  • Optional: pinch of sea salt

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper or silicone baking mat.
  2. Unroll croissant dough onto a clean surface and carefully separate the triangles without tearing.
  3. Mix melted butter, sugar, and vanilla extract in a small bowl until combined.
  4. Brush the butter mixture lightly over each croissant triangle.
  5. Sprinkle chocolate chips generously over each triangle; tuck some inside the dough before rolling for extra gooey pockets.
  6. Roll each triangle from the wide end to the tip, forming a croissant shape, and press the tip gently to seal.
  7. Place crookies on the baking sheet about 2 inches apart. Brush tops with beaten egg and optionally sprinkle a pinch of sea salt.
  8. Bake for 15-18 minutes until golden brown and puffed, watching closely starting at 12 minutes.
  9. Remove from oven and transfer to a cooling rack. Let rest for a few minutes before serving.
