Instructions

  1. Toast the pine nuts in a dry skillet over medium heat for 2-3 minutes until golden and fragrant, watching carefully to avoid burning.
  2. Transfer toasted pine nuts to a food processor along with fresh basil leaves, minced garlic, grated Parmesan, and a pinch of salt and pepper. Pulse a few times to combine.
  3. With the processor running, slowly drizzle in the olive oil until the mixture becomes a smooth, vibrant pesto. Add lemon juice last and pulse to mix. Taste and adjust seasoning if needed. Set aside.
  4. Crack the eggs into a mixing bowl and whisk vigorously until uniform and slightly frothy. Season lightly with salt and pepper.
  5. Heat butter or olive oil in a non-stick skillet over medium-low heat. Pour in the eggs and let sit undisturbed for about 30 seconds to set around the edges.
  6. Gently stir the eggs with a silicone spatula, pushing from the edges toward the center and folding slowly. Cook for 2-3 minutes until softly set but still slightly runny.
