This recipe collection offers five easy and flavorful ways to cook a single chicken breast, delivering juicy, tender, and delicious meals perfect for busy days or solo dinners.

Ingredients

Scale
  • 1 boneless, skinless chicken breast (68 ounces / 170225 grams), ideally at room temperature
  • Extra virgin olive oil (for searing and drizzling)
  • Kosher salt
  • Freshly ground black pepper
  • 2 cloves garlic, minced
  • Juice and zest of 1 lemon
  • Fresh herbs such as rosemary, thyme, or parsley
  • Unsalted butter, softened
  • Smoked paprika
  • Cumin
  • Chili flakes
  • Dried oregano
  • ¼ cup (60 ml) yogurt or Greek yogurt (dairy-free coconut yogurt as substitute)
  • 2 tbsp (30 ml) soy sauce or tamari
  • 1 tbsp (15 ml) honey or maple syrup
  • 1 tbsp (15 ml) Dijon or whole grain mustard
  • Optional vegetables for serving: cherry tomatoes, baby spinach, steamed broccoli

Instructions

  1. Trim any excess fat or tendons from the chicken breast. Pat dry with paper towels to remove moisture. Optionally, brine the chicken in a saltwater solution (1 tbsp salt dissolved in 2 cups water) for 15-20 minutes to lock in moisture.
  2. Season or marinate the chicken breast depending on desired flavor. For lemon herb, combine olive oil, lemon zest, garlic, rosemary, salt, and pepper. For Asian glaze, mix soy sauce, honey, garlic, and chili flakes. Let sit for 10-15 minutes if possible.
  3. Heat a non-stick skillet or cast-iron pan over medium-high heat. Add a splash of olive oil and heat until shimmering but not smoking.
  4. Place the chicken breast in the pan away from you. Press gently with tongs for even contact. Cook undisturbed for 4-5 minutes until a golden crust forms. Flip carefully.
  5. Reduce heat to medium-low. Add 1 tablespoon of butter and fresh herbs to the pan. Tilt the pan and spoon melted butter over the chicken repeatedly (basting). Cook for another 5-7 minutes or until internal temperature reaches 165°F (74°C).
  6. Transfer chicken to a plate and tent loosely with foil. Let rest for 5 minutes to allow juices to redistribute.
  7. Slice the chicken against the grain for tenderness. Garnish with fresh herbs or a squeeze of lemon juice before serving.

Notes

Brining the chicken breast briefly helps keep it juicy but is optional. Patting the chicken dry before searing is key to achieving a golden crust. Use a meat thermometer to ensure the chicken is cooked to 165°F (74°C). Avoid overcrowding the pan if cooking multiple breasts. Basting with butter and herbs adds flavor and moisture.
