  • 1 cup blueberries, washed and dried
  • 1 kiwi, peeled and sliced
  • 1 cup mandarin orange segments

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking pan or line it with parchment paper.
  2. In a large bowl, cream together 1 cup softened unsalted butter and 1 cup granulated sugar until light and fluffy (3-4 minutes). Add 1 large egg and 1 teaspoon vanilla extract; mix until combined.
  3. In a separate bowl, whisk together 2 ½ cups all-purpose flour, ½ teaspoon baking powder, and ¼ teaspoon salt. Gradually add dry ingredients to the butter mixture, mixing on low speed until just combined.
  4. Transfer dough to prepared pan and press evenly to about ¼ inch thickness.

  7. Spread cream cheese mixture evenly over cooled crust. Arrange sliced strawberries, blueberries, kiwi, and mandarin orange segments on top.
  8. Refrigerate assembled fruit pizza for at least 30 minutes to set topping and meld flavors.
