  • 8 ounces cream cheese (softened to room temperature)
  • 1/4 cup ranch dressing
  • 1/2 cup shredded cheddar cheese
  • 23 green onions (finely sliced)
  • 1/4 teaspoon garlic powder
  • Freshly ground black pepper to taste
  • Optional: fresh spinach leaves or baby arugula
  • Optional: crisp bacon bits
  • Optional: sun-dried tomatoes

Instructions

  1. Soften the cream cheese by leaving it at room temperature for about 30 minutes or microwaving for 15-20 seconds.
  2. In a medium bowl, combine softened cream cheese, ranch dressing, garlic powder, and black pepper. Stir until smooth and creamy.
  3. Lay one tortilla flat on a cutting board. If stiff, wrap in a damp paper towel and microwave for 15 seconds to soften.
  4. Spread an even layer of the cream cheese mixture over the tortilla, leaving about 1/2 inch border at edges.
  5. Place turkey slices evenly over the cream cheese layer. Sprinkle shredded cheddar cheese and sliced green onions on top. Add optional ingredients if desired.
  6. Roll the tortilla tightly but gently into a log shape, keeping the filling inside.
  7. Wrap the rolled tortilla tightly in plastic wrap or parchment paper and refrigerate for at least 30 minutes.
  8. Remove from fridge, unwrap, and slice into 1-inch thick rounds using a sharp knife.
  9. Arrange pinwheels on a serving platter and serve chilled or at room temperature. Garnish with extra green onions or paprika if desired.
