Instructions

  1. Heat 1 tablespoon olive oil in a sauté pan over medium heat. Add diced onion and cook for 3-4 minutes until translucent. Add minced garlic and cook for another 30 seconds until fragrant.
  2. Transfer sautéed onion and garlic to the crockpot. Add chicken breasts, black beans, corn, diced tomatoes with green chilies, diced green bell pepper, and taco seasoning.
  3. Pour in 4 cups of low-sodium chicken broth, ensuring ingredients are comfortably covered.
  4. Season with salt and pepper to taste, keeping it light.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender.
  6. About 30 minutes before serving, remove chicken breasts and shred with two forks. Return shredded chicken to the crockpot and stir.
  7. Taste and adjust seasoning if needed. Add hot sauce or chopped jalapeños for extra heat if desired.
