A forgiving and simple crockpot chicken tortilla soup perfect for cozy weeknights, featuring tender chicken, smoky chipotle, and crisp tortilla strips.

  • 2 large boneless, skinless chicken breasts (or thighs)
  • 4 cups low-sodium chicken broth
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen or canned corn, drained
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 12 chipotle peppers in adobo sauce, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • Salt and black pepper to taste
  • Juice of 1 fresh lime
  • Optional toppings: fresh cilantro (chopped), shredded cheddar or Monterey Jack cheese, avocado slices, crispy tortilla strips or crushed tortilla chips, sour cream or Greek yogurt

Instructions

  1. Chop the onion and garlic finely. Rinse and drain the black beans and corn if using canned. Mince the chipotle peppers.
  2. Place the chicken breasts at the bottom of the slow cooker. Add diced tomatoes with juice, black beans, corn, chopped onion, minced garlic, chipotle peppers, cumin, smoked paprika, chili powder, salt, and black pepper. Pour chicken broth over everything.
  3. Cover and cook on low for 6 hours or on high for 3 hours until chicken is tender.
  4. Remove chicken breasts and shred with two forks. Return shredded chicken to the slow cooker.
  5. Optional: Use an immersion blender to puree about one-third of the soup directly in the crockpot for a silky texture. Stir well.
  6. Stir in fresh lime juice. Taste and adjust seasoning with salt, pepper, or chipotle as needed.
  7. Ladle soup into bowls and serve with desired toppings such as tortilla strips, cheese, avocado, cilantro, and sour cream.

Notes

If soup tastes flat, add a pinch of sugar or a dash of vinegar to brighten flavors. Browning the onion before adding deepens flavor. Add chipotle peppers gradually to control heat. Blend part of the soup for creaminess without dairy. Add tortilla strips just before serving to keep them crisp.
