Easy Crockpot French Dip Sandwiches

Tender, juicy beef slow-cooked in a crockpot with caramelized onions and herbs, served on toasted rolls with rich au jus for dipping. Perfect for cozy dinners and casual gatherings.

  • 34 pounds chuck roast (well-marbled)
  • 4 cups beef broth (low-sodium preferred)
  • 1 large onion, thinly sliced
  • 34 garlic cloves, minced
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste
  • 2 bay leaves
  • 68 French rolls or hoagie buns
  • Butter, softened, for toasting rolls (optional)

Instructions

  1. Trim any excess fat from the chuck roast, leaving a little for flavor. Pat dry with paper towels.
  2. Optional: Heat 1 tablespoon oil in a skillet over medium-high heat. Sear the roast on all sides, about 3-4 minutes per side, then set aside.
  3. Place sliced onions and minced garlic at the bottom of the crockpot. Lay the roast on top.
  4. Pour in beef broth and Worcestershire sauce. Sprinkle thyme, salt, and pepper over the meat. Add bay leaves.
  5. Cover and cook on LOW for 7-8 hours or HIGH for 4-5 hours until beef is fork-tender and shreds easily.
  6. Remove roast from crockpot and shred using two forks or slice thinly with a sharp knife. Return shredded beef to crockpot juices and stir to soak up au jus.
  7. Preheat skillet or oven to medium heat. Spread softened butter on rolls and toast until golden and slightly crispy.
  8. Assemble sandwiches by piling shredded beef onto rolls. Spoon au jus over the top or serve on the side for dipping. Optionally, add provolone or Swiss cheese and melt slightly.

Notes

Searing the beef before slow cooking adds flavor but is optional. Keep the lid closed during cooking to maintain heat. Use a meat thermometer aiming for 190°F internal temperature for shreddable beef. Slice against the grain for tender bites. Skim fat from au jus if desired. Save leftover au jus for reheating sandwiches later.
