  • 2 cups shredded green cabbage

  • 2 tbsp fresh lime juice
  • 1 tbsp honey
  • Salt and pepper, to taste
  • 8 small corn or flour tortillas
  • Optional toppings: sliced avocado, crumbled cotija cheese, extra lime wedges

Instructions

  1. In a medium bowl, whisk together honey, fresh lime juice, minced garlic, chili powder, cumin, salt, pepper, and chicken broth.
  2. Place the chicken breasts or thighs in the crockpot, then pour the honey lime mixture evenly over the top.
  3. Cover and cook on low for 4 to 6 hours, or until the chicken is tender and easily shredded with a fork. Alternatively, cook on high for 2-3 hours.
  4. Remove the chicken to a cutting board and shred it using two forks. Return the shredded chicken to the crockpot and stir it into the juices.
  5. Combine shredded cabbage, diced mango, sliced red bell pepper, and chopped cilantro in a large bowl.
  6. In a small bowl, whisk together lime juice, honey, salt, and pepper; pour this dressing over the slaw and toss well.
  7. Heat tortillas in a dry skillet over medium heat for about 30 seconds per side or wrap in a damp paper towel and microwave for 20-30 seconds until warm and pliable.
  8. Spoon a generous amount of shredded honey lime chicken onto each tortilla. Top with mango slaw and optional toppings like avocado slices and cotija cheese.
