  • 2 lemons (zested and juiced)
  • 3 cloves garlic, minced

  • 1 teaspoon dried rosemary (or 1 tablespoon fresh, finely chopped)
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup low-sodium chicken broth or water
  • 1.5 pounds baby potatoes, halved
  • 2 tablespoons olive oil (for potatoes)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley (optional, for garnish)
  • Salt and pepper, to taste (for potatoes)

Instructions

  1. Prepare the chicken marinade by combining olive oil, minced garlic, lemon zest, lemon juice, dried thyme, dried rosemary, salt, and pepper in a mixing bowl. Whisk until well mixed.
  2. Marinate the chicken thighs in the marinade for 15-30 minutes if possible, or add marinade directly to the slow cooker if short on time.
  3. Preheat oven to 425°F (220°C). Toss halved baby potatoes with olive oil, garlic powder, salt, and pepper in a bowl.
  4. Spread potatoes evenly on a baking sheet in a single layer and roast for 25-30 minutes, flipping halfway through, until golden and crispy.
  5. If not marinated earlier, place chicken thighs in the slow cooker and pour marinade over them. Add chicken broth or water to the bottom.
  6. Cover and cook chicken on low for 4-5 hours or on high for 2-3 hours until chicken reaches an internal temperature of 165°F (74°C).
  7. Optionally, spoon some chicken juices over roasted potatoes and sprinkle with fresh parsley.
  8. Serve chicken thighs alongside roasted potatoes with a lemon wedge. Enjoy warm.
