Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the chicken breasts into thin strips about 1/2-inch wide. Slice the bell peppers and onion into similar-sized strips.
  3. In a small bowl, combine chili powder, smoked paprika, cumin, garlic powder, onion powder, cayenne, salt, and pepper.
  4. In a large mixing bowl, drizzle olive oil over the chicken and veggies. Sprinkle the spice blend evenly, then toss everything thoroughly until coated well.
  5. Spread the chicken and vegetable mixture out in a single layer on a large rimmed baking sheet. Avoid overcrowding.
  6. Roast in the preheated oven for 20-25 minutes. About halfway through (around 12 minutes), stir or shake the pan to promote even browning.
  7. Optional: Switch the oven to broil for the last 2-3 minutes for extra char, watching carefully to avoid burning.
  8. While the chicken fajitas roast, warm the tortillas on a dry skillet or wrapped in foil in the oven for a few minutes.
  9. Serve the roasted chicken and veggies with warm tortillas, lime wedges, and your favorite toppings.
