  • 1 head romaine lettuce leaves
  • 2 tablespoons olive oil
  • 1 small yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Juice of 1 fresh lime
  • Small handful fresh cilantro, chopped (optional)
  • Optional toppings: diced avocado, shredded cheese, salsa, sour cream

Instructions

  1. Rinse the romaine lettuce leaves gently and pat dry with paper towels. Finely chop the onion and mince the garlic. Chop cilantro if using. Set aside.
  2. Place a large skillet over medium heat and add 2 tablespoons of olive oil. Let it warm until shimmering but not smoking.
  3. Add chopped onions to the skillet and cook, stirring occasionally, until translucent and soft (4-5 minutes). Toss in the garlic and cook for another minute until fragrant.
  4. Add the ground turkey to the skillet, breaking it up with a spatula. Cook until no longer pink, stirring regularly to brown the meat evenly (8-10 minutes).
  5. Sprinkle in the cumin, smoked paprika, chili powder, salt, and pepper. Stir well to combine all the flavors (about 2 minutes).
  6. Remove the skillet from heat and squeeze fresh lime juice over the turkey mixture. Stir in chopped cilantro for freshness.
  7. Lay out the lettuce leaves on a serving plate. Spoon generous amounts of the turkey mixture into each leaf. Add optional toppings like diced avocado or shredded cheese.

If lettuce leaves feel stiff, soak briefly in cold water and pat dry. Avoid overcrowding the skillet to ensure proper browning. Use lean ground turkey (93% lean or higher) for best results. Adjust seasoning and lime juice to taste. Store turkey mixture separately from lettuce to keep leaves crisp.
