  • 1 cup (240g) full-fat Greek yogurt

Instructions

  1. Measure 2 cups (240g) of self-rising flour into a mixing bowl.
  2. Add 1 cup (240g) of full-fat Greek yogurt to the flour.
  3. Stir the flour and yogurt together with a wooden spoon or spatula until the dough starts to come together; it will be shaggy and sticky.
  4. Lightly flour a clean surface and turn the dough out.
  5. Knead gently for 3-4 minutes, folding the dough over itself until soft and slightly tacky but not overly sticky. Add a pinch more flour if too wet, sparingly.
  6. For pizza, roll out the dough into a 10-12 inch (25-30 cm) circle. For bagels, divide dough into 6-8 equal pieces, roll into balls, poke a hole through the center, and stretch to form rings.
  7. Preheat oven to 425°F (220°C). Place pizza stone in oven if using.
  8. Place shaped dough onto parchment-lined baking sheet or pizza peel.
  9. For bagels, optionally brush with egg wash or water for a golden crust.
  10. Bake pizza dough for 12-15 minutes until golden and slightly puffed.
  11. Bake bagels for 15-18 minutes until crusty outside and chewy inside.
  12. Let baked goods cool for 5 minutes on a wire rack before serving.

Notes

Use full-fat Greek yogurt for best texture. Avoid over-kneading to keep dough soft. If dough is too sticky, add flour sparingly. Preheat oven and pizza stone for crisp crust.
