A cozy, sweet cinnamon roll casserole made effortlessly in a crockpot, delivering gooey, buttery cinnamon goodness perfect for any breakfast or brunch occasion.

Ingredients

Scale
  • 2 cans refrigerated cinnamon rolls with icing (recommend Pillsbury)
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, melted
  • ½ cup brown sugar, packed
  • 1 tsp ground cinnamon
  • ½ tsp vanilla extract (optional)
  • Pinch of salt
  • 1 cup chopped pecans or walnuts (optional)

Instructions

  1. Spray the inside of your crockpot insert with non-stick spray or lightly butter it to prevent sticking.
  2. In a mixing bowl, combine softened cream cheese, melted butter, brown sugar, cinnamon, vanilla extract, and a pinch of salt. Stir until smooth and creamy with no lumps.
  3. Open the cans of cinnamon rolls and cut each roll into quarters. Arrange the pieces evenly in the bottom of the crockpot, leaving space for the sauce to seep in.
  4. Drizzle the cream cheese mixture evenly over the cinnamon roll pieces, gently pushing the sauce between pieces to coat everything.
  5. Sprinkle chopped pecans or walnuts on top if desired.
  6. Cover with the crockpot lid and cook on LOW for 2 to 2.5 hours until bubbly and rolls are soft and gooey but not mushy.
  7. After 2 hours, test a center piece for doneness. Cook an additional 15-30 minutes if needed, watching to prevent overcooking.
  8. Serve warm, spoon portions onto plates and drizzle with the cinnamon roll icing from the cans or your own glaze.

Notes

Use room temperature cream cheese for smooth sauce. Cut cinnamon rolls into quarters for better sauce absorption. Avoid lifting the crockpot lid during cooking to maintain heat. Add a tablespoon of water around edges if bottom browns too much. Toast nuts before adding for extra flavor. Can be made vegan or gluten-free with appropriate ingredient swaps. For oven baking, use a greased casserole dish covered with foil and bake at 350°F for 30-40 minutes.
