  • 1/4 teaspoon baking powder

  • 3 tablespoons milk (45 ml), any kind works, whole milk preferred
  • 2 tablespoons vegetable oil (30 ml)
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon chocolate chips or chunks (about 15 grams), semi-sweet recommended

Instructions

  1. In a small bowl, combine 4 tablespoons of all-purpose flour, 2 tablespoons of unsweetened cocoa powder, 3 tablespoons of granulated sugar, 1/4 teaspoon baking powder, and a pinch of salt. Stir until evenly blended.
  2. Add 3 tablespoons of milk, 2 tablespoons of vegetable oil, and 1/4 teaspoon of vanilla extract to the dry ingredients. Stir thoroughly until smooth and lump-free.
  3. Lightly grease a microwave-safe mug with oil or non-stick spray to prevent sticking.
  4. Pour half of the batter into the mug. Add 1 tablespoon of chocolate chips or chunks in the center. Pour the remaining batter on top to cover the chocolate.
  5. Microwave on high for 50-60 seconds. Start with 50 seconds and check; the cake should be set on the edges but gooey in the center. If underdone, microwave in 5-second increments until perfect.
  6. Let the mug cake rest for about 1 minute before eating to finish cooking and cool slightly.
  7. Enjoy warm, optionally topped with vanilla ice cream or powdered sugar.

Notes

Grease the mug well to prevent sticking. Microwave times vary, so start with less time and add in small increments to avoid overcooking. Use fresh baking powder for best rise. For a fudgier cake, reduce flour by 1 tablespoon and increase cocoa powder by 1 tablespoon. Can be baked in a 350°F oven for 12-15 minutes if no microwave is available.
