  • 1 cup shredded mozzarella cheese (about 120g)
  • 1 cup shredded sharp cheddar cheese (about 115g)
  • ½ cup tomato sauce or marinara sauce (about 120ml)
  • 2025 pepperoni slices (or turkey pepperoni)
  • ¼ cup finely chopped or thinly sliced bell peppers (about 30g)
  • Sliced black or green olives (optional)
  • Italian seasoning, a pinch
  • Fresh basil or oregano for garnish (optional)

Instructions

  1. Measure out 1 cup shredded mozzarella and 1 cup shredded cheddar cheese. Slice 20-25 pepperoni pieces and chop about ¼ cup bell peppers. Have ½ cup tomato sauce ready.
  2. Lay out 20 sturdy crackers on a large plate or tray as pizza bases.
  3. Spread approximately 1 teaspoon of tomato sauce evenly over each cracker using a small spoon or butter knife. Avoid overloading to prevent sogginess.
  4. Sprinkle about 1 tablespoon of mixed shredded cheeses on top of the sauce on each cracker.
  5. Add one or two pepperoni slices on each cracker, followed by a few pieces of chopped bell peppers and sliced olives if using.
  6. Lightly sprinkle Italian seasoning over the top.
  7. Optional: Place crackers on a baking sheet lined with parchment paper and bake at 350°F (175°C) for 5-7 minutes until cheese melts slightly. Watch closely to avoid soggy crackers.
  8. Allow to cool slightly if warmed, then pack into small containers or bento boxes for easy snacking or lunch.
