  • 3/4 cup rolled oats (old-fashioned oats)
  • 1/2 cup all-purpose flour (or almond flour for gluten-free)
  • 1/3 cup light brown sugar, packed
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/3 cup unsalted butter, cold and diced (or coconut oil for dairy-free)
  • 1/4 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel the peaches by blanching them quickly in boiling water for 30 seconds, then plunging into ice water. Slice into roughly 1/2-inch thick pieces.
  3. In a medium bowl, combine sliced peaches, honey, lemon juice, vanilla extract, cinnamon, and cornstarch. Toss gently until peaches are evenly coated and cornstarch is dissolved.
  4. Transfer the peach mixture to a 9×9-inch baking dish, spreading evenly.
  5. In a separate bowl, whisk together oats, flour, brown sugar, salt, and cinnamon. Add cold diced butter and rub into dry ingredients using a pastry cutter or fingers until mixture resembles coarse crumbs with some pea-sized bits.
  6. If using nuts, stir them into the streusel mixture.
  7. Evenly sprinkle the oat streusel over the peach layer.
  8. Bake uncovered for 35-40 minutes until filling bubbles and streusel is golden brown. Tent with foil if streusel browns too quickly.
  9. Remove from oven and let cool for at least 10 minutes to thicken the filling.
  10. Serve warm, optionally topped with vanilla ice cream or whipped cream.

Notes

Use firm, ripe peaches for best texture. Frozen peaches can be used but reduce honey slightly. Use cold butter for streusel to maintain crumbly texture. Tent with foil if topping browns too fast.
