Easy One-Bowl Banana Bread

  • 3 medium ripe bananas, mashed
  • 1 ¾ cups (220g) all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon (optional)
  • ⅓ cup (75g) unsalted butter, melted
  • ¾ cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • Optional add-ins:
  • ½ cup (60g) chopped walnuts or pecans
  • ½ cup (90g) chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your loaf pan with butter or non-stick spray, or line it with parchment paper.
  2. Mash the bananas in a large mixing bowl using a fork or potato masher until mostly smooth with a few small lumps remain (about 2 minutes).
  3. Add melted butter and sugar to the mashed bananas. Stir gently until combined and glossy.
  4. Mix in eggs and vanilla extract until just blended; avoid overmixing.
  5. In a separate small bowl, whisk together flour, baking soda, salt, and cinnamon.
  6. Add the dry ingredients to the wet ingredients in two batches, folding gently after each addition until no streaks of flour remain. Do not overmix.
  7. Fold in optional walnuts or chocolate chips if using.
  8. Pour batter into the prepared loaf pan and smooth the top gently.
  9. Bake for 55-65 minutes, checking at 55 minutes with a toothpick. It should come out clean or with a few moist crumbs.
  10. Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Do not overmix the batter to avoid dense bread. Use ripe bananas for best sweetness and moisture. Let the bread cool completely before slicing to improve texture. Tent with foil if top browns too quickly. For dairy-free, substitute butter with coconut or vegetable oil. For gluten-free, use a gluten-free flour blend. For vegan, replace eggs with flax eggs and butter with coconut oil.
