  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup granulated sugar (150g)
  • ½ cup unsalted butter (115g), melted and slightly cooled
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • For the Crunchy Streusel Topping:
  • ½ cup all-purpose flour (65g)
  • ⅓ cup packed brown sugar (70g)
  • ½ teaspoon cinnamon
  • 3 tablespoons unsalted butter (45g), cold and cubed

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray.
  2. In a large mixing bowl, mash the ripe bananas until smooth but still a little chunky.
  3. Add the melted butter to the mashed bananas and stir to combine.
  4. Mix in the sugar, beaten eggs, and vanilla extract until well blended, being careful not to overmix.
  5. In a separate small bowl, whisk together the flour, baking soda, and salt.
  6. Add the dry ingredients to the wet banana mixture and gently fold with a spatula until just combined. Some lumps are okay.
  7. Prepare the streusel topping by combining flour, brown sugar, and cinnamon in a small bowl. Add cold cubed butter and mix with a pastry cutter or fingers until coarse crumbs form.
  8. Pour the batter into the prepared loaf pan and spread evenly. Sprinkle the streusel topping generously over the batter.
  9. Bake for 60-70 minutes, checking around 55 minutes. Insert a toothpick into the center; it should come out clean or with a few moist crumbs. Tent with foil after 40 minutes if topping browns too quickly.
  10. Let the banana bread cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.
