A comforting and indulgent breakfast bake made by soaking cinnamon rolls in a creamy custard overnight and baking to golden perfection. Perfect for busy mornings or special gatherings.

  • 1 package pre-made cinnamon rolls (8 rolls, with icing packet included)
  • 6 large eggs, room temperature
  • 1 ½ cups whole milk (or almond/oat milk for dairy-free)
  • ½ cup heavy cream (optional, can use all milk)
  • ½ cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • Optional for serving: powdered sugar, maple syrup or leftover cinnamon roll frosting, fresh berries or sliced fruits

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Slice cinnamon rolls into quarters and spread evenly in the baking dish.
  3. In a large bowl, whisk 6 eggs until smooth. Add 1 ½ cups whole milk, ½ cup heavy cream, ½ cup granulated sugar, 1 tablespoon vanilla extract, 1 teaspoon ground cinnamon, and a pinch of salt. Mix until combined and creamy.
  4. Pour custard over cinnamon roll pieces, pressing gently with a spatula to help soak.
  5. Cover dish tightly with plastic wrap and refrigerate overnight or at least 6 hours.
  6. Remove plastic wrap and bake uncovered for 45-50 minutes until top is golden brown and a toothpick comes out clean.
  7. Let cool for 10 minutes before cutting into squares.
  8. Serve warm with icing, maple syrup, powdered sugar, and fresh fruit if desired.

Notes

Use room temperature eggs and milk for smooth custard. Press cinnamon rolls gently before refrigerating to ensure even soaking. Watch baking time closely to avoid overbaking. For a crunchier top, sprinkle cinnamon sugar before baking. Can be made dairy-free or gluten-free with substitutions.
