  • 1 tablespoon fresh grated ginger
  • 1/4 cup (60 ml) low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1/4 cup (60 ml) water
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
  • 2 stalks green onions, sliced thinly (optional garnish)
  • 1 teaspoon toasted sesame seeds (optional garnish)

Instructions

  1. Cut 1 pound boneless, skinless chicken thighs into bite-sized pieces and toss with 1 tablespoon cornstarch to coat lightly.
  2. Cut 3 cups fresh broccoli into small florets, rinse and drain well.
  3. In a small bowl, whisk together 1/4 cup low-sodium soy sauce, 2 tablespoons honey, 1 tablespoon rice vinegar, 1/4 cup water, minced garlic, and grated ginger.
  4. Heat 2 tablespoons vegetable oil in a large skillet or wok over medium-high heat until shimmering.
  5. Add the coated chicken pieces in a single layer and sear without moving for 2-3 minutes until golden, then stir and cook another 3-4 minutes until cooked through.
  6. Add broccoli florets to the skillet and stir-fry for 3-4 minutes until bright green and tender-crisp.
  7. Pour the teriyaki sauce over the chicken and broccoli and stir to coat evenly.
  8. Mix 1 tablespoon cornstarch with 2 tablespoons cold water to make a slurry, pour into the skillet, and stir continuously for 1-2 minutes until the sauce thickens and becomes glossy.
  9. Remove from heat and garnish with sliced green onions and toasted sesame seeds if desired.
  10. Serve immediately over steamed rice or noodles.

Notes

Use chicken thighs for juicier meat. Toss chicken in cornstarch before cooking to lock in moisture and create a crispy crust. Cook chicken in batches if pan is small to avoid steaming. Stir continuously after adding cornstarch slurry to prevent lumps. Adjust sauce sweetness or tanginess by tasting before cooking. Do not overcook broccoli; it should remain tender-crisp.
