  • 2 pounds beef chuck roast, trimmed and sliced thinly against the grain
  • 4 cups fresh broccoli florets (packed)
  • 1/2 cup low sodium soy sauce
  • 1/2 cup beef broth
  • 2 tablespoons brown sugar
  • 3 garlic cloves, minced
  • 1 tablespoon fresh grated ginger (optional)
  • 1 teaspoon sesame oil
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • Sliced green onions for garnish
  • Pinch of red pepper flakes (optional)

Instructions

  1. Trim excess fat from the chuck roast and slice thinly against the grain into 1/4-inch strips. (Tip: slightly freeze the meat for about 30 minutes to make slicing easier.)
  2. In a medium bowl, whisk together soy sauce, beef broth, brown sugar, minced garlic, grated ginger, and sesame oil to make the sauce.
  3. Place the sliced beef evenly at the bottom of the slow cooker and pour the sauce over it, coating each piece well.
  4. Cover and cook on low for 5 to 6 hours until the beef is fork-tender.
  5. Wash and chop broccoli into bite-sized florets while the beef cooks.
  6. About 30 minutes before serving, stir the broccoli into the slow cooker.
  7. Mix cornstarch with cold water to make a slurry, then pour into the slow cooker and stir gently.
  8. Replace the lid and cook on high for 25-30 minutes until broccoli is tender-crisp and sauce thickens.
  9. Taste and adjust seasoning if needed. Garnish with sliced green onions and red pepper flakes if desired.
  10. Serve hot over steamed jasmine rice, noodles, or cauliflower rice.

Notes

Slice beef thinly against the grain for tenderness. Slightly freeze beef before slicing to make it easier. Add broccoli in the last 30 minutes to keep it crisp and bright. Mix cornstarch with cold water before adding to avoid clumps. Adjust seasoning after thickening sauce. Can substitute arrowroot or potato starch for cornstarch. For gluten-free, use tamari instead of soy sauce.
