  • 4 boneless, skinless chicken breasts (about 1.5 pounds or 700 grams)
  • 1 to 1.5 cups salsa (240360 ml), medium or chunky, smoky chipotle recommended
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • ½ teaspoon chili powder (optional)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh cilantro, a handful chopped (optional)
  • Lime wedges for serving (optional)

Instructions

  1. Pat the chicken breasts dry with paper towels.
  2. In a small bowl, mix garlic powder, onion powder, ground cumin, chili powder (optional), salt, and pepper.
  3. Rub the spice blend evenly over both sides of each chicken breast.
  4. Drizzle olive oil at the bottom of the slow cooker to prevent sticking and add richness.
  5. Place the seasoned chicken breasts in a single layer in the slow cooker.
  6. Pour salsa evenly over the chicken breasts.
  7. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours until chicken reaches 165°F (74°C) and is tender enough to shred.
  8. Shred the chicken directly in the slow cooker using two forks or tongs and mix with salsa juices.
  9. Taste and adjust seasoning if needed.
  10. Garnish with chopped cilantro and serve with lime wedges.

Notes

If salsa is too watery, remove the lid in the last 30 minutes and cook on HIGH to reduce liquid. Avoid lifting the lid frequently to maintain cooking temperature. For juicier meat, chicken thighs can be used instead of breasts. For a spicier dish, add jalapeños or cayenne pepper. To keep it dairy-free and gluten-free, use appropriate salsa and avoid adding cheese.
