  • 2 tablespoons (25 g) granulated sugar (adjust to taste)
  • ½ teaspoon vanilla extract (optional)
  • 1 package (3 oz / 85 g) blue gelatin (blue raspberry or berry flavor)
  • Mini clear plastic shot glasses or silicone molds (for serving)

Instructions

  1. Prepare the Red Layer: In a mixing bowl, pour 1 cup boiling water over the red gelatin powder. Stir gently until completely dissolved (about 2 minutes). Add ½ cup cold water and mix. Pour the red gelatin evenly into your shot glasses, filling each about one-third full. Place the tray in the refrigerator to chill for 30–40 minutes until the layer is firm but still slightly tacky to the touch.
  2. Make the Coconut Cream Layer: While the red layer chills, sprinkle the unflavored gelatin over ½ cup cold water in a small bowl. Let it bloom for 5 minutes. Meanwhile, warm the coconut milk in a small saucepan over low heat—do not boil—and stir in sugar until dissolved. Remove from heat and whisk in the bloomed gelatin until fully dissolved.   3. Prepare the Blue Layer: Repeat the steps from the red layer: dissolve the blue gelatin in 1 cup boiling water, add ½ cup cold water, and stir well. Once the coconut cream layer is firm but tacky, pour the blue gelatin on top to fill the shot glasses to the brim. Chill for at least 2 hours or until fully set.
  4. Serving: Once fully chilled, gently run a warm, damp cloth around the outside of the shot glasses for easier removal if using silicone molds. Serve chilled straight from the cups or unmolded on a serving tray.

Notes

Use natural gelatin brands like Knox for a clean set and smooth texture. Full-fat canned coconut milk works best for the creamy layer. Let each layer chill until tacky before adding the next to prevent colors from bleeding. You can speed up chilling by placing shots in the freezer for 15–20 minutes but watch closely to avoid freezing solid. For a dairy-free and vegan option, substitute gelatin with agar agar and follow package instructions. Adding a splash of lime juice or zest to the blue gelatin adds a zesty pop.
