  • 3/4 cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1/3 cup (40g) unsweetened cocoa powder (Dutch-processed recommended)
  • 1/2 cup (65g) all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 teaspoon instant espresso powder (optional)
  • 1 packet (about 0.25 oz/7g) red and blue Popping Pop Rocks candy

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking pan lightly or line it with parchment paper, leaving some overhang for easy removal.
  2. In a medium bowl, whisk the melted butter and sugar until combined but don’t overbeat. Add the eggs one at a time, whisking gently after each addition. Stir in the vanilla extract. This should take about 5 minutes.
  3. In a separate bowl, sift together the cocoa powder, flour, salt, baking powder, and espresso powder. This step takes about 3 minutes.
  4. Gradually fold the dry mix into the wet ingredients with a spatula until just combined. Avoid overmixing to keep brownies tender.
  5. Pour the batter into the prepared pan and spread evenly. Tap the pan lightly on the counter to release air bubbles.
  6. Bake for 20-25 minutes. Check at 20 minutes by inserting a toothpick in the center; it should come out with a few moist crumbs but no raw batter. Edges should look set and slightly pulling away from the pan.
  7. Cool completely on a wire rack before cutting to prevent crumbling and to help Pop Rocks adhere.
  8. Cut into approximately 1.5-inch (4cm) bite-sized squares.
  9. Sprinkle Pop Rocks on top just before serving to maintain their popping effect.
