  • 1/2 cup (115g) unsalted butter, cold and cubed
  • 1 large egg yolk, room temperature
  • 2 tablespoons ice water
  • 2 cups (480ml) whole milk
  • 1/2 cup (100g) granulated sugar
  • 4 large egg yolks
  • 1/4 cup (30g) cornstarch
  • 2 teaspoons vanilla extract
  • 2 tablespoons unsalted butter
  • 1 cup strawberries, hulled and sliced
  • 1 cup kiwi, peeled and sliced
  • 1 cup blueberries
  • 1 cup mango, peeled and cubed
  • Optional: a handful of edible flowers for garnish
  • 1/4 cup apricot jam (for glazing, optional)
  • 1 tablespoon water (for glazing, optional)

Instructions

  1. Prepare the Tart Crust: In a large bowl, whisk together flour, sugar, and salt. Add cold, cubed butter and incorporate until mixture resembles coarse crumbs (about pea-sized).
  2. Add Egg Yolk and Water: Stir in egg yolk, then slowly add ice water, 1 tablespoon at a time, mixing gently until dough just comes together. Wrap dough in plastic wrap and chill for at least 30 minutes.
  3. Preheat Oven: Set oven to 350°F (175°C) about 10 minutes before baking.
  4. Roll Out the Dough: On a lightly floured surface, roll dough into a 12-inch circle. Transfer to 9-inch tart pan, pressing dough evenly into edges. Trim excess dough and prick bottom with fork.
  5. Blind Bake: Line tart shell with parchment paper and fill with pie weights or dried beans. Bake 15 minutes, remove weights, bake another 10-12 minutes until golden. Let cool completely.
  6. Make Custard Filling: Heat milk over medium heat until just simmering. In a bowl, whisk sugar, egg yolks, and cornstarch until smooth and pale.
  7. Temper the Eggs: Slowly pour half the hot milk into egg mixture while whisking constantly. Pour mixture back into saucepan.
  8. Cook Custard: Cook over medium heat, whisking constantly, until thickened and bubbling (3-5 minutes). Remove from heat and stir in vanilla extract and butter until melted and smooth.
  9. Strain and Cool: Pour custard through fine sieve into clean bowl. Cover with plastic wrap pressed on surface to avoid skin forming. Chill until firm, about 1 hour.
  10. Assemble Tart: Spread chilled custard evenly into cooled tart shell. Arrange sliced strawberries, kiwi, blueberries, and mango on top in colorful pattern.
  11. Glaze Fruit (Optional): Warm apricot jam with water until smooth. Brush glaze over fruit with pastry brush for shine.
  12. Chill Before Serving: Refrigerate tart at least 30 minutes to set. Serve chilled or at room temperature.

Notes

Keep butter cold for flaky crust. Constant whisking prevents lumps in custard. Blind bake crust with weights to avoid sogginess. Assemble fruit topping just before serving to keep crust crisp. Dough can be prepared up to 2 days ahead. Cornstarch can be substituted with arrowroot or tapioca starch.
