  • Butter (for toasting buns)
  • 2 medium yellow onions, thinly sliced (about 10.5 oz / 300 g)
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon brown sugar
  • Pinch of salt
  • Fresh thyme sprigs (optional)
  • Optional toppings: pickles, lettuce, tomato slices, mustard or mayo

Instructions

  1. Heat butter and olive oil in a skillet or on the griddle over medium-low heat. Add thinly sliced yellow onions, a pinch of salt, and brown sugar. Stir occasionally and cook slowly for 25-30 minutes until golden brown and soft. Add fresh thyme halfway through if using.
  2. Divide ground chuck into 4 equal portions (about 4 oz each). Gently roll into loose balls without overworking the meat.
  3. Preheat Blackstone griddle to medium-high heat (around 375°F).
  4. Place beef balls on the hot griddle. Using a sturdy metal spatula or burger press, smash each ball into a thin patty about 1/4 inch thick. Season immediately with salt and pepper. Cook for 2-3 minutes without moving to develop a deep crust.
  5. Flip patties carefully and place a slice of cheddar cheese on each. Cook for another 1-2 minutes until cheese melts and burger is cooked through but still juicy.
  6. Spread butter on buns and toast face down on the griddle for about 1 minute until golden and slightly crisp.
  7. Assemble burgers starting with the toasted bun bottom, add cheesy smash burger, a generous spoonful of caramelized onions, and optional toppings. Top with the bun crown.
  8. Serve immediately while hot and juicy.

Do not overwork the meat to keep burgers tender. Smash patties only once to retain juiciness. Cook onions low and slow to avoid burning. Toast buns last to keep them crisp. If sticking occurs, lightly oil the griddle and ensure it is hot before smashing.
