  • 4 ripe but firm peaches, halved and pitted
  • 1 cup (about 240g) mascarpone cheese, chilled
  • 3 tablespoons honey, plus extra for drizzling
  • 1 teaspoon freshly squeezed lemon juice
  • 1/2 teaspoon vanilla extract (optional)
  • 1 tablespoon olive oil, for brushing peaches
  • Pinch of salt

Instructions

  1. Preheat the grill or grill pan to medium-high heat (about 375°F/190°C).
  2. Rinse and halve the peaches, removing the pits carefully. Brush the cut sides lightly with olive oil.
  3. In a chilled mixing bowl, combine mascarpone, honey, lemon juice, vanilla extract (if using), and a pinch of salt. Whisk gently until smooth and slightly fluffy, avoiding overwhipping.
  4. Place peaches cut-side down on the grill. Grill for 3-4 minutes without moving to get a good sear.
  5. Flip peaches and grill skin-side down for another 2-3 minutes until tender but still holding shape.
  6. Arrange grilled peaches on serving plates and dollop generous spoonfuls of honey mascarpone on top or alongside. Drizzle extra honey over everything before serving.

Notes

Use ripe but firm peaches to prevent them from falling apart on the grill. Brush peaches with olive oil to prevent sticking. Whip mascarpone gently in a chilled bowl to maintain a silky texture. Serve immediately for best flavor and texture. Leftover mascarpone can be stored in the fridge up to 2 days; grilled peaches keep for about 24 hours but are best fresh.
