  • ½ cup (120 ml) honey (preferably raw local honey)
  • ¼ cup (60 ml) Dijon mustard
  • 2 tablespoons (30 ml) whole grain mustard
  • ⅓ cup (70 g) brown sugar (light or dark)
  • 2 tablespoons (30 ml) apple cider vinegar
  • ½ teaspoon (1 g) ground cinnamon
  • ⅛ teaspoon (a pinch) ground cloves
  • 1 large fresh pineapple, peeled and sliced into 810 rings
  • 2 tablespoons (30 g) unsalted butter, melted
  • Fresh thyme sprigs for garnish (optional)

Instructions

  1. Preheat your oven to 325°F (163°C). Position the rack in the lower third of the oven.
  2. Score the ham rind with shallow diagonal cuts about ½ inch (1.3 cm) apart, creating a diamond pattern.
  3. In a medium bowl, whisk together honey, Dijon mustard, whole grain mustard, brown sugar, apple cider vinegar, melted butter, ground cinnamon, and ground cloves until smooth. Set aside.
  4. Place the ham on a wire rack inside a roasting pan, rind side up. Brush a generous layer of the honey mustard glaze all over the scored surface.
  5. Heat a skillet or grill pan over medium-high heat. Add a small pat of butter or oil, then caramelize pineapple rings for 2-3 minutes per side until golden brown and slightly charred. Remove and set aside.
  6. Arrange the caramelized pineapple rings over the ham, pressing gently so they stick to the glaze. Secure with toothpicks if needed.
  7. Roast the ham in the preheated oven for about 1 hour 20 minutes, basting with remaining glaze every 20 minutes. Tent loosely with foil if glaze darkens too quickly.
  8. Check the internal temperature with a meat thermometer; it should reach 135°F (57°C).
  9. Remove the ham from the oven and let it rest for 15 minutes to redistribute juices.
  10. Slice the ham about ¼ inch thick between pineapple rings and garnish with fresh thyme if desired. Serve warm.

Notes

Use a meat thermometer to avoid drying out the ham. Baste multiple times for a sticky glaze. Caramelize pineapple separately for best flavor. Rest ham for 15 minutes before slicing. Tent with foil if glaze darkens too quickly. For dairy-free, substitute butter with plant-based alternative or omit.
