  • 3 cloves garlic, minced
  • 1 medium lemon, zested and juiced
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup freshly grated Parmesan cheese
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • Optional: pinch of red pepper flakes

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Snap off the woody ends of the asparagus and rinse, then pat dry.
  3. In a mixing bowl, toss asparagus with olive oil, minced garlic, kosher salt, black pepper, and lemon zest until evenly coated.
  4. Arrange asparagus in a single layer on a rimmed baking sheet lined with parchment paper or lightly greased.
  5. Roast in the oven for 12-15 minutes, flipping the asparagus gently with tongs around the 8-minute mark.
  6. Remove from oven and immediately sprinkle with freshly grated Parmesan cheese.
  7. Squeeze lemon juice over the asparagus and toss gently to combine.
  8. Serve warm immediately or keep warm in the oven until ready to serve.

Notes

If garlic browns too quickly, add it halfway through roasting or roast whole garlic cloves alongside asparagus for a milder flavor. Use freshly grated Parmesan for better melting and flavor. Do not overcrowd the pan to ensure crisp-tender asparagus. Adding lemon juice at the end brightens the dish. Leftovers keep up to 3 days refrigerated and reheat gently in the oven to avoid sogginess.
